Almond Porridge

Apparently as a nation we just don't eat enough oats. This porridge with a twist makes a great breakfast or light lunch, and the ground almonds give it a lovely hint of marzipan.


1 breakfast cup of porridge oats
2 breakfast cups of soya milk
1 level tbsp ground almonds
1 tsp soft brown sugar


This makes a generous serving for one person. You can use water instead of soya milk, but it doesn't give such a good result.



Put the soya milk, oats and almonds in a pan, bring to the boil and then simmer until cooked (about 2 or 3 mins), stirring all the time.

Pour into a bowl and sprinkle with sugar to taste.
