Vegan Coleslaw

This is so easy to make. Serve with salads, or as a baked potato filling, or in sandwiches with Redwood Cheezley, or with mashed potato, Redwood Deli slices, pickled onions and chutney...

Ingredients

1 small white cabbage, grated
2 carrots, grated
2 spring onions, finely sliced
2 to 3 tbsp vegan mayonnaise (e.g. Plamil)
Freshly ground black pepper

 

Method

Mix the ingredients thoroughly. Yummy!

Notes

This is also nice with a handful of salted peanuts or a finely chopped fennel. If you don't have any vegan mayo, then try using a vinaigrette dressing instead - it gives a lovely fresh result.
