Vegan Carbonara

Delicious served with garlic bread, great for kids too.


1 small onion, diced
4 Redwood rashers, diced
400ml tin coconut milk
2 tbsp nutritional yeast flakes
150g tagliatelle


Serve with garlic bread and salad tossed in a balsamic dressing. Beauty!



Fry the onion in a knob of marg or olive oil for 2 mins. Add the diced rashers and stir, then add the coconut milk and yeast flakes. Season to taste and simmer for 10 mins.

Meanwhile cook the tagliatelle in boiling water according to the instructions on the packet.

Pile the tagliatelle onto plates and top with the carbonara.
